I love burnt ends, but that seems like a boat load of trouble that isn't really needed. Folks make BBQ recipes WAY too complicated at times.
Let us know how they turn out.

Those look like they will eat. They are a bit labor intense anyway, just not that much waiting.
I use pork belly ( they know burnet ends are popular and charge a lot for the pork belly) or if I find them very meaty Country Style Ribs. A local grocer carries them that have some shoulders instead of the anemic rib meat we are used to seeing in the Country Style. They are good, but nothing like the ones we find at the little store in Kerens.
Enjoy the fruits of your labor. They look great!

She seem to be at home there
Her big brother is at home too except he'd never fit in the cabinet let alone hop up there. He weighs almost 20 lbs. now and eats like a horse. The first thing in the morning that she does after I'm dressed is hop up onto my shoulders. Sometimes she digs her nails in. But how can I resist a happy cat that likes to rub her head against mine and purr in my ear? I'm glad he doesn't do that he'll just saunter over and rub against my leg, then roll over looking for a belly rub. They do the same for my wife too who's petite. The big cat would probably knock her over.

Here they're about the same size, but not for long.

Spicy chicken breast with avocado salad. Refried beans and a tortilla, because I like 'em.
