Have you tried cross body racking of the slide?
With a 1911 platform, you really need to rack it once, engage the thumb safety, and go to work. Reloads do not require more than dropping the ss.

I know what you're going through . I Started getting old ... My beloved 1911 and Star model PD were getting hard to rack .
Recently turned 73 and noticed hand strength waning ... the semi-auto's got turned in for a S&W J-frame in 38 Special ... which is ironic ... that was my first concealed carry gun in 1967 , blued steel model 60 ... this new one is Air-Weight and stainless ...
and I Like It !
Looks like I've come full circle back to where I started ... but don't feel naked with the 5-shot revolver ... no racking required !

Strength training is great....until arthritis and age prevent much of it. Kinda hard to grip a slide when your fingers won't fully grip. I'm having trouble with my CZ's right now because of those and a couple of other factors. Oh yeah, I do work out with dumb bells and kettlebells. Pretty much stopped with the heavy stuff, doing a lot of lighter reps and endurance stuff.

My hands and forearms have weakened over the years. Arthritis has creep in with age. Arthritis gloves and Voltaren help with the arthritis and strength training may help with the hands and forearms. Just continuing to struggle with the slides (as a form of exercise) will also help. Asking instructors is something that I have learned to do; an experienced instructor usually has a wealth of knowledge.

* Another option is to change the recoil spring. *
Most pistols will successfully cycle your favorite ammunition with a simple recoil spring change. I know these lighter springs are available for 1911-style recoil systems and I have them for 1911s, Sigs, and CZs. For captured recoil springs (like Glocks, CZ P10s, etc.) there are customizable captured recoil springs made by DPM Captured Recoil Springs. I have one of these for a Sig P320 XCarry. Other manufacturers make these and they are sold by many online retailers.

Young/er guys don't get that YET!
I wear arthritis gloves and used Voltaren twice a day. It has helped immensely with the arthritis.
I have CZs from the 75 series and I changed to lighter recoil springs. Now it's almost back to normal and it's not enough that I don't go shooting when I want to. CajunGunWorks.com sells recoil springs and metal guide rods. I bought a set of springs and their guide rod and installed the 13# spring. Went to the range today and the lighter springs cycled all the ammo that I normally shoot (70, 115, 124, 135/6, 147, 150 grains). For CZ and other pistols with captive springs DPM makes a captured recoil springs that the weight can be changed.

I went through the quest for an easier to rack semi with my wife.
The Sig p238 and its 9mm cousin the p938 were options. The Walther CCP M2 (380 and 9mm) is easy to rack but lousy trigger. Wife bought one. Was not pleasant for her and much of that had to do with trigger. Reset must be over 5 pounds.
She settled on the M&p shield 380 ez and the gun has an easy to rack slide and the mags are designed to be a little easier to load. Shooting is pleasant. Trigger compares favorably to my Walther PPS or my Glock g22. Relatively easy to hold on target.

Love carrying snubs too! They do have certain advantages.
