Ok, I carry my p3AT with a full mag and one chambered. I get home. Do I leave the gun the way I carried it, or do I totally unload it? That is, empty the chamber and the mag? I don't need it for home defense, my Remington express takes care of that.

Emptying the chamber is your call (I never do with my P3AT or my Sig), but there's no need to empty the mag. Remember that if you do empty the chamber every night then reload in the morning, you have to aware of bullet setback.
Why would you want to "totally unload it"?
