Bolt it upside down to the crossbar under your bedframe. When you need it you can reach down and it will fall into your hand...
I'd also store a flashlight there too.

I got a gun safe for Christmas. Nothing big and fancy...it's the Gun Vault multi-deluxe safe with a 4-button keycode pad and mountable base. I'm not really sure where to mount it. Right now it's sitting on the floor under my computer desk and hidden unless you look for it, but the reason I asked for it was so I could keep my guns secured from any people that wander into my room while I'm not there, or burglar's from stealing them. The problem is if someone did break into my house, they could simply pick it up and walk out with it, then break into it within the comfort and safety of their own home. The easiest thing to do would be mount it to my desk, but there's really not a place to put it where it's concealed. At the same time, I want it in a spot that's unobstructed and easy to get to in case I ever need to get in it during an emergency. I'm not mounting it to the wall, but I could possibly attach it to the floor, assuming I got screws long enough to poke through the carpet and into the wood floor beneath. I live in an apartment, so it will be put in my room, not in public areas (obviously). Any thoughts or suggestions?

Depending on the set-up of your room, I'd recommend the closet.
Put it in one of the corners, and bolt it to the floor and both walls (drill extra holes if needed). If possible, turn it so the door opens toward the wall, so it will be harder to pry it open (can't get a pry bar into the safe's doorframe as easily if it's next to the wall). It will make it very difficult to remove quickly and quietly, although not impossible, of course.
Put a flashlight on the floor next to it, and drape a blanket or old coat over the whole works. If you need access in a hurry, just dive into the closet, pull off the covering, and you already have a light handy to help you get into it.
I've always liked the closet idea.
I have the Multi-Vault in my bedroom, secured with the steel cable sold by the manufacturer to my bedframe. The cable attaches to a pre-drilled hole in the safe for just such a purpose.
Mine is secured on a shelf in my bedroom. No access problems.
I bolted mine to the floor in my closet.
