Traditionally, the first medal actually awarded in each Olympics has been for a shooting sport; I wonder if that tradition still holds true?
There are a bunch of rifle and pistol matches coming up in the Olympics, I'm looking forward to watching them.

Yup. First medal was for 10m air rifle.

Here's a link to the page with the schedule for all the Olympic shooting sports. I'm not sure if it's local time or Beijing time that they're listing though, and I'm also not sure if they are broadcasting the shooting sports live on the site.

Anyone think there would be any interest in a competition shooting TV show using setups similar to IPSC? Maybe on the Outdoor channel or the Sportsman channel?
I don't know that defensive shooting would fly with the Olympic committee. In archery they don't compete shooting at torso targets, just bullseyes.
Having said that, I can't explain fencing & boxing.
I would like to see some big bore guns though, like .357 magnums.
